  • Obtains specified meat from stock and carries to cutting table.
  • Cuts and trims meat from bone and dices meat, using knife, cleaver, and bandsaw.
  • Weighs meat on platform scale and places in tubs.
  • Tags each tub for weight and contents.
  • May grind meat.
